Diabetic Friendly Cheesy Cauliflower Patties


Cheesy Cauliflower Patties low carb, diabetic friendly

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko or bread crumbs (found in the bread crumb aisle, healthier option)
1/2 t cayenne pepper
salt
olive oil

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko or bread crumbs, cayenne & salt to taste.
Cook on a greased skillet until golden brown.
I like to replace the bread crumbs with crushed pork rinds, it absorbs the moisture, and makes them even more low carb.

Being a lover of cabbage this is right down my alley... borrowed from Skinny Body Care with Greg...
Cabbage steaks... I prefer mine with butter instead of Olive Oil.

1 (approx 2lb) head of organic green cabbage, cut into 1″ thick slices
1.5 tablespoons olive oil
2 to 3 large garlic cloves, smashed
kosher salt
freshly ground black pepper
spray olive oil OR non-stick cooking spray

Instructions:
1. Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1″ thick slices.

2. Rub both sides of cabbage with smashed garlic.

3. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices.

4. Finally, sprinkle each side with a bit of kosher salt and freshly cracked black pepper.

5. Roast on the middle rack for 30 minutes. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy. Serve hot and Enjoy!

I just want to say "Thank You" to all of my supporting customers at my DiabeticsSockShop.com.

Let me relay the story of my diabetic sock shop.

In 2009 my Diabetics Sock Shop was little more than an idea, to prepare for my retirement; which was to follow another 9-10 years later.

During my career as a Nuclear Medicine Technologist, I used the funds I had saved for retirement to help others...because, I had a good paying job, and could always earn the money back.

In 2010, I officially started my DiabeticsSockShop and started selling diabetic socks on EBay, my DiabeticsSockShop.com website, and my shop.DiabeticsSockShop.com web store; all in preparation for a supplemental retirement income.

My plan was to replace the funds I had spent in caring for others; prior to my retirement.

Little did I know, I would have a medical downfall of my own, and my DiabeticsSockShop would help me support myself.

In 2011 my Mother passed away from medical complications from several medical conditions, placing the stress of her probate on me, with the stress of my career which had steadily increased over my 20 plus years working in various hospitals.

I bore the stress for a couple of more years until my body finally said enough was enough.

It was at this point my body started a shut down, and I developed symptoms of a stroke. I still have some mild symptoms, as I have recuperated over the major symptoms.

Over night I went from a $70k a year job, to medical disability. I had to spend my retirement savings to survive on, and my DiabeticsSockShop, gave me more money to survive on.

I have since recuperated from my physical and financial woes, thanks to many new friends and opportunities they introduced me too; as well as the support of my diabetic sock customers.

I still run my diabetic sock shop, as I am a diabetic myself... interestingly enough, can be brought on by chronic stress, lack of proper sleep, and diet....all of which were caused by my career of 20 years.

I wish I had turned to the Internet as a mode of income sooner than I did; although the technology, and my knowledge hadn't always been as it is now.

According to an article on Science Daily, Insulin Pumps Yield Better Control Of Blood Glucose Levels Than Multiple Injections For Diabetes Type 2 patients.

I just read an interesting article offering insight on the efficacy of insulin pumps versus multiple insulin injections for persons with diabetes type 2.

Here is their summary statement of the article.
Type 2 diabetes is usually controlled by diet and medication, but most people with advanced disease also end up needing insulin therapy to achieve control of their blood sugar. However, roughly a third of these patients struggle to achieve the right level of blood sugar control with insulin injections many times a day. The growing obesity epidemic is adding to the problem by leading to greater insulin resistance.
